How do we make kvass?

Kvass is a traditional fermented drink that is popular in Eastern Europe and Russia. It is made from grains or bread and flavored with fruit, herbs or spices. The kvass production process includes the following steps:

 

Preparation of the substrate: The substrate for kvass is usually made from rye bread or grains, such as barley or wheat. The grains are ground into coarse flour and mixed with water to make a dough. The dough is then left to ferment for several days, during which time it develops a sourdough-like taste.

Flavors: When the base is fermented, it is mixed with fruit, herbs or spices to add flavor. Popular flavorings for kvass include raisins, mint, and berries.

Second fermentation: the flavored base is then subjected to a second fermentation process, during which it develops its characteristic fermentation. This process can take several days to a week, depending on the level of carbonation and taste. Filtration and bottling: After the second fermentation is complete, the yeast is filtered to remove solids and then bottled or canned. It is usually served chilled and can be enjoyed on its own or used as a mixer in cocktails.
